SAVOURY GIFTS

CUCMBER PICKLE - A PERFECT PRESENT TO GO WITH CHEESE AND COLD CUTS OVER THE FESTIVE HOLIDAYS
4 cucumbers,1 onion,1 green pepper, 20g salt,140g sugar, teaspoon mustard seed & celery seeds, pinch saffron, pinch ground mace,300ml white wine vinegar.

Method
Peel & slice the cucumber thinly, slice the onion & green pepper thinly, mix all three with the salt, set aside in a colander for 1 hour, then rinse under cold water and drain.
Put the Vinegar and spices into a large pan and bring to the boil add the drained salted cucumber mix bring back to the boil simmer for 2 minutes, remove from the heat and pack into clean jars. Will keep for months stored in airtight jar in the fridge.

TOMATO CHILLI JAM - GREAT WITH COLD TURKEY & GRILLED FISH OR MY FAVOURITE, PAIRED WITH GOATS CHEESE

500g Tomatoes, 4 chillies no seeds, 4 cloves of garlic, 1 inch piece of peeled ginger , 30 ml thai fish sauce, 250g brown sugar, 4fl oz red wine vinegar.

Method
Blitz all the ingredients together in a blender except for the sugar, then pour into a thick bottomed pot add the sugar and bring to the boil, simmer for approx 1 hour until thick and jam like , pour into clean jars . Store as for cucumber pickle

RHUBARB VODKA

75cl Vodka, 1 kg rhubarb, 250g sugar, zest orange, 6 tablespoons grenadine, star anise.

Method
Chop the rhubarb add the sugar, orange, grenadine & star anise cook in a covered tray in oven approx 30 mins until soft, allow to cool then add to vodka , steep for two weeks, then pass the vodka through a fine muslin to remove rhubarb, you are left with a pink sweet rhubarb tasting vodka.
